Ingredients

  • 3 oz Monterey jack cheese grated
  • 2 tblsp butter
  • 1 C minced onion
  • 1 rib celery
  • 1 tblsp minced garlic
  • 1 carrot minced
  • 1/2 c minced green onion, including onion greens
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp fresh thyme
  • 1 tsp paprika
  • 1/2 c chicken broth
  • 1 tsp Worcestershire sauce
  • 1 / 3 C ketchup
  • 1 1/2 lb ground beef
  • 3/4 lb Italian sausage
  • 1 c saltines crushed
  • 2 lg eggs beaten
  • 1/3 c parsley
  • 1 tsp hot sauce

Preparation

Step 1

Preheat oven to 375.
place grated cheese on plate and put in freezer until ready to use.
Heat butter in med fry pan and add onion, celery garlic,carrot and green onions.Cook until tender.Add salt pepper thyme paprika and Worcestershire and 1/3 c ketchup.Remove to cool

Wisk egg and broth together.Stir in saltines parsley and cooled onion mixture.Crumble cheese and add to mixture.Add ground beef mixture and mix well form loaf and bake about 1 hr or temp of 140 degrees.
