This is my sandwich bread. It is soft and fluffy. My kids really like it because it has a sweet flavor to it. If it is too sweet, cut back the ingredients.

Ingredients

  • 1 c + 2 Tbsp warm water (90-100degrees)
  • 2 Tbsp Brown sugar
  • 2 Tbsp honey
  • 1/4 c olive oil
  • 1 tsp salt
  • 1/4 c dry milk
  • 2 c wheat flour
  • 1 c unbleached flour
  • 1 Tbsp vital wheat gluten
  • 2 1/2 tsp active dry yeast

Step 1

If using a bread machine, add ingredients in order listed. If doing a timer on machine, add milk to top or middle of mix. Set machine on dough cycle. Machine will do first rise.

Punch down and shape lightly and place in buttered or sprayed loaf pan. Cover with a towel and let rise.

If mixing by hand, mix water sugar and honey and add yeast till dissolved. Add other ingredients, beginning with oil. Rise, punch down, shape lightly and place in buttered or sprayed loaf pan.

You can butter top of loaf or spray with olive oil to make it a softer crust. After second rise, bake at 350 for 30 minutes. Cool completely before slicing.

*Vital wheat gluten gives elasticity to bread and keeps it from being crumbly.

*If it is cold in the house, turn oven to 170 degrees for about 5 minutes. Turn off, check to make sure it is warm but not hot inside and check bread in one hour. My loaves are usually ready by the first hour or I did something wrong. If you have to reheat the oven, take the bread out before you heat it.
