Ingredients
- 1/2 cup (1 stick) softened butter
- 1/2 cup granulated sugar
- 1 egg yolk
- 1/4 teaspoon salt
- 1 tablespoon water
- 2 teaspoons fresh lemon juice grated rind of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup superfine sugar

Preparation
Step 1
-Beat butter and sugar together until light and creamy
-Stir in egg yolk, salt, water, lemon juice, lemon rind, and vanilla.
-Add the flour and mix well.
-Form dough into a ball, wrap in waxed paper, and chill at least 2 hours.
Preheat oven to 350.
- Roll out dough on floured surface
- Cut with cookie cutter and place on ungreased cookie sheets
- Bake for 8-10 minutes or until edges are lightly browned
- Remove cookies from cookie sheets immediately and cool on wire racks
- Sprinkle with sugar or decorate
