Summer Squash Quiche

Ingredients
- 2 tablespoons butter
- 1 small onion, diced
- 1 clove garlic, minced
- 1 medium summer squash, diced
- 1 medium tomato, diced
- 6 eggs
- 1/3 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup sour cream

Step 1
Preheat oven to 375 degrees. In a medium skillet, heat butter over medium heat. Add onion and garlic, and saute 3 - 5 minutes. Add squash and tomato, and cook until softened, about 10 minutes.
While vegetables are cooking, whisk together eggs and milk in a large bowl. Add salt and pepper. Add cooked vegetables to egg mixture, and stir in sour cream. Pour into a 10" pie pan or ovenproof skillet, and bake for 30- 35 minutes.
