Pressure Cooker Barbecue Chicken

Ingredients

  • 1 whole 3 to 4 lb chicken, cut into 8 pieces (excluding wings)
  • 1 c apple cider vinegar (optional)
  • 2 T olive oil
  • 2 c barbecue sauce
  • 2 c salad greens (optional)

Preparation

Step 1

To brine chicken, place in a bowl with apple cider vinegar and cover with cold water. Leave on counter for 30 mins. Then remove chicken; pat dry with paper towels. (Note: This step is optional, to save time skip to step 2).

Place olive oil in a pressure cooker and heat over med-high heat. Add chicken, skin side down, and cook for 4 mins or until browned. Turn and cook for 4 mins more, then cover with 1 c barbecue sauce, lock lid on top, and bring to full pressure. Lower heat to med-low and cook 20 mins, then release pressure and serve with salad greens and additional barbecue sauce, if desired.
