Frozen Lime Cream

  • 2 large eggs, separated
  • 1/2 cup sugar
  • 1/4 cup fresh lime juice
  • 1/2 cup heavy cream
  • Garnish if desired: sliced fresh strawberries

Preparation

Step 1

In the top of a double boiler whisk the egg yolks slightly; whisk in the sugar and lime juice just until combined. Cook over simmering water, stirring constantly, until the mixture thickens and coats a metal spoon; cover and chill until thick.
Beat egg whites until they hold stiff peaks. Without washing the beater, beat cream until stiff.

Fold cream, then egg whites, into lime mixture. Turn into an 8-inch pie plate; freeze until firm - dessert will not become ice-hard. Cover with plastic wrap and store in freezer.

At serving time, but into wedges and garnish with strawberries.
