Summer Squash and Sausage Casserole

Serve with tomato and cucumber salad with balsamic dressing.

Ingredients

  • 2 lbs yellow squash, rinse & cut into chunks
  • 10 crushed saltine crackers
  • 1 c milk or cream
  • 1 c cottage cheese
  • 12 oz shredded cheddar
  • 1 lb ground sausage, brown & drain

Preparation

Step 1

In large saucepan, cover squash w/ water & bring to boil, then turn off heat, cool and drain. Mix all ingredients except 1 cup cheese and place in greased casserole dish. Bake at 350 for 30-40min until bubbly. Top w/ 1 c cheese last 5 min to melt.
