Struffoli

Ingredients

  • 2 dozen eggs yolks, room temp
  • 3 whole eggs
  • 4 C sifted flour
  • 4 tsp baking powder
  • 2 tap vanilla

Preparation

Step 1

Mix all above ingredients in stand mixer with dough hook.
Take dough out and knead by hand until pliable but not too soft.
Let dough rest for 20 min
Take small pieces of dough and roll into a rope
Cut each rope into 1/2" pieces with bench scraper or knife
Place on tablecloths. Do not let the pieces stick together.
Heat oil in deep pot. Approx. 1/2 full.
Take small amounts of dough pieces and fry til light golden brown.
When cool, place balls in Ziploc bags til ready to prepare with honey, lemon rind pieces, and sprinkles.
