Old Fashioned Potato Salad w/ Sweet Pickles

Ingredients

  • 1 1/2 lbs. white skinned potatoes, peeled & cut into 3/4" pcs.
  • 2 hard boiled eggs, cut into pcs.
  • 1 c. diced celery
  • 3/4 c. chopped red onion
  • 3/4 c. light Mayo
  • 1/8 c (+-) dijon mustard
  • 1/8 c.(+-) sour cream
  • 1/2 c. sweet pickle slices, cut in quarters
  • 3 T. sweet pickle juice from jar
  • Parsley to garnish

Preparation

Step 1

Steam potatoes until tender, about 12 minutes. Cool. Place potatoes in large bowl.

Add eggs, celery, (onion, mayo..sour cr..mustard mixed together), pickles and pickle juice.

Toss gently to blend.

Season to tastewith salt & pepper

Top with chopped parsley
