Frittata

Ingredients

  • 3 Tbsp olive oil
  • 1/4 cup sliced green onions
  • 1/4 cup diced ham or prosciutto
  • 2 oz chopped mushrooms
  • 6 eggs
  • salt
  • freshly ground pepper
  • 1/4 cup shredded mozzarella cheese

Preparation

Step 1

Heat the oil over medium heat in a large nonstick (and ovenproof) pan. Stir in the green onions and mushrooms and cook for a few minutes, then add the ham, cooking until warmed through.

Beat eggs lightly in a bowl, then pour them into the pan. Season with salt and pepper, then mix the eggs quickly with the other ingredients.

Let cooks, WITHOUT stirring for 5 or 6 minutes, until it's puffy and golden brown.

Then, using a plate, flip the frittata onto the place, then slide it back into the pan to cook on the other side for 3 to 4 more minutes.

Sprinkle with cheese and place under the broiler until cheese is melted and gooey.
