Mini Chocolate Cheesecakes

Super easy to make chocolate cheesecakes. Great for parties or to take to the office.

Ingredients
- Ground chocolate cookie crumbs, I used Oreos without the frosting
- 16 oz cream cheese
- 2/3 c sugar
- 1/2 c cocoa
- 2 eggs
- 1 tsp vanilla
- 12 cup cake liners
Preparation
Step 1
Put cupcake liners in 12 muffin cups. Put 1 T of cookie crumbs in each cup. Beat together cream cheese, sugar, cocoa, eggs and vanilla. Pour batter in each cup and bake at 350 for 18 minutes. Let cool. Top with whipping cream. You can sprinkle cocoa on top or some cookie crumbs. Refrigerate.
