Kamaboko (fish cakes)

Ingredients

  • 3 cups fish (salmon or cod) cubed
  • 3 heaping tablespoons of corn starch
  • ¼ cup sake
  • ¾ cup water
  • 1 egg
  • ½ cup sugar
  • 1 tsp msg
  • 1 tbsp salt

Preparation

Step 1

Process fish in food processor for 2 minutes.
Continuing to process, add cornstarch, sake, and water.
Process for 2 minutes and add egg, sugar, and msg.
Process for 2 minutes and continue while adding salt.
Continue to process until the mixture becomes firm.
Turn the mixture out into a bowl.
You may wish to add chopped carrots, green onions, and sesame seeds.
Shape into rounds or ovals with your hands and deep fry until golden brown.
