Ingredients
- 4 English Muffins - split
- 16 bakcon slices
- water
- 8 large eggs
- SAUCE
- 1/4 cup butter or margarine
- 1/4 cup flour
- 1 tsp paprika
- 1/4 tsp pepper
- 1/8 tsp ground nutmeg
- 2 cups milk
- 2 cups Swiss cheese, grated
- 1/2 cup white wine
- TOPPING
- 1 tbsp butter
- 1/2 cup crushed corn flakes
Preparation
Step 1
Arrange muffins halves with cut side up in a 9x13 inch pan. Fry bacon until crisp. Put 2 slices on each muffin half. Heat water in large pot. Poach eggs in water until set. Put cooked egg on each muffin.
SAUCE:
Melt butter. Add flour, paprika, pepper and nutmeg. Stir milk slowly and boil until it thickens. Add cheese and wine blending until cheese is melted. Spoon over eggs. Sprinkle with the topping mixture and bake at 375 degrees for 20-25 minutes.
