  • 3 tablespoons butter
  • 1-2 cans chicken broth
  • 1 can water
  • 1 onion, chopped
  • 4-5 celery stalks, chopped
  • 4 large potatoes, chopped
  • 2 large potatoes, shredded
  • 1 can evaporated milk
  • 2 tablespoons flour
  • shredded cheddar cheese

Preparation

Step 1

Melt butter; saute' onions & celery; add potatoes, broth & water; reduce & cook 45 minutes; combine 1/4 cup milk w/ flour & set aside; add remaining milk to soup & simmer 15-20 minutes; add milk/flour mixture & stir; salt & pepper. Serve w/ cheese.
