Leg of Lamb to Die for

Leg of Lamb recipe that even those who do not like lamb, LOVE! Many have been converted with this tasty recipe.
Ingredients
- Tbsp of each to start:
- 1 Leg of Lamb (boned or bone in)
- Sweet Basil, Oregano,Pepper, Seasoned Salt, Thyme, Marjoram, Garlic Salt, Rosemary, Regular Salt, Tarragon, and any other spices you like
- Mayonaise (keeps meat moist)

Preparation
Step 1
Preheat oven to 450
Remove lamb from fridge at least 1/2 hour before preparation. Cut off some of the excess fat on the lamb but leave some.
Cut slits into the meat that are 3-4 inches long and 1/2-1in. deep. In the areas that you are not able to do that, make them as long and as deep as possible.
In a large Ziplock bag, combine Spices--Start with approx. 2 Tbsps each and then add more as needed. Be VERY GENEROUS.
Wash hands...Take handfulls of mayonaise and smooth over entire leg. Again, be very generous.
Place lamb on a rack in an uncovered pan and place in oven, Immediately reduce heat to 350F. Do not cover or baste
To cook well done = 30 min per lb. (inside temp sshould be 175-180)Take out at 160F and let continue to cook. (Europeans prefer slightly rare, internal temp = 160-165F)
Serve with red currant or mint sauces. Goes well with peas and roasted potatos.
