Upside Down Sausage-Apple Cornbread

  • UPSIDE DOWN TOPPING
  • 1/2 lb. pork sausage links
  • 4 Tbsp. butter
  • 1/2 cup packed brown sugar
  • 4 small apples, peeled and cut into eighths.
  • CORNBREAD
  • 1 cup flour
  • 3/4 cup yellow cornmeal
  • 3 Tbsp. brown sugar
  • 1 Tbsp. baking powder
  • 1 tea. salt
  • 1 egg, lightly beaten
  • 4 Tbsp. butter
  • 1 cup milk
  • Maple syrup

Preparation

Step 1

Grease 8x8 baking dish.

Brown sausages. Discard all but 2 Tbsp. drippings.

Add butter and brown sugar to skillet, stirring until sugar is melted. Add apples and saute over med. heat, turning occasionally, until soft, about 10 mins.

Arrange sausages in rows across the bottom of prepared pan. Insert apple slices, rounded sides down, between rows of sausage, wedging them in tightly. Pour reserved pan juices over.

Preheat oven to 400 degrees.

Make cornbread: stir flour, cornmeal, brown sugar, baking powder, and salt in a med. bowl. Add egg, melted butter and milk and stir until well combined. Pour batter over apples and sausage. Smooth the top.

Bake for 20-25 mins. or until cake tester comes out clean.

Immediately invent over platter. Cut into saqures, serve with maple syrup.
