Green Chile Bread Pudding (in muffin pan)

Ingredients

  • 5 eggs
  • 1 cup whole milk
  • 2/3 cup heavy cream
  • 1 tea. chili powder
  • 1/4 tea. salt
  • 1/4 tea. ground cumin
  • 1/4 tea. oregano
  • 3/4 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 Tbsp. canned diced green chilies
  • 6 1/2 cups trimmed and cubed day-old French or Italian bread

Preparation

Step 1

Adjust rack to lower third of oven. Preheat to 350 degrees.

Grease a 12 cup muffin pan.

Whisk eggs, milk and cream to blend thoroughly. Mix in the chili powder, salt, cumin and oregano, then mix in the cheese and chilies. Add the bread, mix thoroughly. Divide the mixture evenly among the muffin cups.

Sprinkle with extra cheese if desired.

Bake 25-30 minutes, or until knife comes out clean. Cool 5-10 minutes.
