Crispy Santa Fe Chicken
This recipe is from the Kraft website, and I made some modifications. I prefer a Ritz or Club cracker because they have a better taste.

Ingredients
- 4 small boneless skinless chicken breast halves (1 lb.) pound these into flattened breasts
- 1 egg, beaten
- 12 PREMIUM Saltine Crackers, finely crushed (about 1/2 cup), or use Ritz type or butter crackers
- 4 Tbsp. butter, melted
- 1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
- 1 cup KRAFT Mexican Style Finely Shredded Four Cheese

Step 1
HEAT oven to 425ºF.
DIP chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece.
PLACE in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
BAKE 20 min. or until chicken is done (165ºF). Top with salsa and cheese; bake 5 min. or until cheese is melted.
