  • 1/2 cup onion, chopped
  • 1 tbsp butter, melted
  • 3 cups cooked & mashed rutabaga
  • 2 eggs, separated
  • 1/4 cup milk
  • 3 tbsp all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • pepper to taste -
  • 1/2 cup whole wheat bread crumbs

Preparation

Step 1

Cook onion in non stick skillet in 1 teaspoon (5 ml) butter until tender. Add to mashed rutabaga.
In a small bowl; beat egg whites until stiff; set aside. Beat egg yolks with milk; stir in flour, baking powder and seasonings. Stir egg-yolk mixture into mashed rutabaga. Fold in egg whites. Turn into lightly greased baking dish.
In a small bowl; combine bread crumbs with remaining melted butter. Sprinkle over rutabaga. Bake in preheated 375 F (190 C) oven for approximately 30 minutes
