No Butter Garlic Bread

Ingredients

  • 1 large ciabatta bread loaf (or any of its variations)
  • 1 large piece of parchment greaseproof paper
  • A large bunch of oregano, thyme or parsley leaves, roughly chopped (whichever herb you like!)
  • Olive oil
  • 6 garlic cloves (as much as you want, actually), finely chopped
  • Sea salt and freshly ground black pepper to season

Directions

1. Slice a large ciabatta loaf lengthwise, making sure not to go through all the way to the bottom crust. Cut diagonally (it was as an afterthought that I’d realized this would make it look more elegant than the perpendicular cuts I’d made!) at approximately 3cm intervals, once again making sure not to cut through the crust.

2. Scrunch up the parchment paper and run it under the tap. Lay the wet paper flat on the counter. Place the ciabatta onto the paper.

4. Scatter the finely chopped garlic all over, especially between the slices. Use your hands to make sure every part is covered.

5. Season with sea salt and pepper. Wrap up the loaf, twisting the sides to seal so it forms a little “boat” shape. Place into the oven and bake at 180 deg C (approximately 350 deg F) for 15 minutes. Check once done and bake longer if necessary! (The good thing is it won’t dry out thanks to the “water on the wrapping” technique.)

Toasty, crispy on the outside, and soft, moist in the insides. Voila! Homemade garlic bread that is healthy too; no butter or margarine or preservatives! You could even go so far as to make the bread from scratch, but that’ll be another recipe I’ll upload in the (hopefully, near) future.

Oh yes, me too — especially when you get the garlic bread from the stores, or worse, the frozen ones! But I do find you can slip in this treat once in a (long) since you can make it on your own
