Ingredients

  • 1/2 cup flour
  • s&p
  • 4 fresh sole (3-4 oz each)
  • 6 tablespoons unsalted butter
  • 1 teaspoon grated lemon zest
  • 6 tablespoons lemon juice (3 lemons)
  • 1 tablespoon minced fresh parsley

Preparation

Step 1

1. Combine flour, 2 teaspoon salt, 1 teaspoon pepper. Pat fillets dry with papertowels and sprinkle salt on one side.

2. Heat 3 tablespoons of butter in skillet pan over medium heat until starts to brown.

3. Dredge fillets in seasoned flour on both sides and place in hot butter. Lower the heat to medium-low and cook 2 minutes. Turn carefully with metal spatula, cook for 2 minutes on other side.

4. While 2nd side cooks, add lemon zest and lemon juice to the pan. Put fish on plates and pour sauces over. Sprinkle with parsley, s&p and serve immediately
