Caesar chicken salad

Ingredients

  • 2/3 cup reduced cal mayo
  • 1/4 cup grated parmesan cheese
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tbspn or less anchovy paste
  • 6 cups torn romaine
  • 2 cups cooked chicken cut up
  • 2 cups slicved fresh porcini mushrooms
  • 1 cup small cherry tomatoes

Preparation

Step 1

Cook the chicken with seasonin. In a small bowl , stir together the mayo, parmesan cheese, lemon juice, garlic, and anchovy paste. Set aside even 24 hours ahead is good. Mix all salad ingredients, add a few tbspns of dressing and mix.
