Ingredients
- 1 cup flour
- 3/4 cup yellow cornmeal
- 2 tea. baking powder
- 1/2 tea. salt
- 1 1/2 cups buttermilk
- 1/2 cup maple syrup
- 1 Tbsp. vegtable oil
- 2 large egg yolks
- 2 lage egg whites
Preparation
Step 1
Combine flour, cornmeal, baking powder and salt in a large bowl, and make a well in the center. Place buttermilk, maple syrup, oil, and egg yolks in a bowl, whisk. Add buttermilk mixture to flour mixture, stir until just moist.
Beat egg whites with a mixer at high speed until stiff peaks form. Gently fold egg whites into cornmeal mixture.
Spread batter in heated waffle iron, cook 3-5 minutes, or until done.
