Ingredients
- 1 28 oz. can diced tomatoes, drained
- 2 red bell peppers, cut in 1/2" slices
- 1 onion, cut into 8 wedges
- 2 tea. dried oregano
- 1 tea. ground cumin
- salt & pepper
- 1 1/2 lbs. flank steak, cut crosswise in thirds
- 1 cup long grain white rice
- 1 avocado, sliced
- 1/4 cup fresh cilantro leaves
Preparation
Step 1
In a 5-6 qt. slow cooker combine tomatoes, peppers, onions, oregano, cumin, 1/2 tea. salt and 1/4 tea. pepper. Nestle steak amoung veggies.
Cook on high 4-5 hours or on low 7-8 hours.
25 minutes before serving cook rice.
Using forks, shread beef and mix into cooking liquid.
Serve with rice, avocado and cilantro.
