Chicken Chili Corn Chowder

We love this recipe! It is warm and filling! Absolutely YUMMY! One of our favorites.

Ingredients

  • 3-4 c cooked chicken
  • 1/2 c chopped onion
  • 3 Tbsp flour
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 c chicken broth (or 2 c water, 2 chicken bullion)
  • 2 c hot water
  • 2 c fat free half and half
  • 2 c Monterey Jack Cheese
  • 1 16 oz can cream corn
  • 1 16 oz can whole kernel corn
  • 1 4 oz can green chili
  • salt and pepper

Preparation

Step 1

Saute onion and garlic in oil in a stock pot. Stir in flour over low heat and the slowly stir in chicken broth and water. Heat until thickened slightly. Add half and half, corn, and chili to the soup base and simmer the 15-30 minutes. Add chicken and cheese until melted. Add salt and pepper.

Do not boil soup once cheese is melted or the cheese will be stringy.
