Ingredients

  • 16 oz box Penne Rigate pasta (cooked, drained)
  • 1 1/2 lg green peppers (coarsely chopped)
  • 1 lg can ripe olives (drained, sliced)
  • 1 pkg grape tomatoes (washed, drained)
  • 2 T chopped onion (optional)
  • 2 pkgs crumbled Feta cheese
  • Dressing
  • 1/2 c light olive oil
  • 1/4 c red wine vinegar
  • 1/2 t paprika
  • 1/4 t garlic powder
  • 1/4 t coarsely ground black pepper
  • 4 T Parmesan cheese
  • 1/4 t Basil
  • 1/2 c sugar

Preparation

Step 1

Mix dressing thoroughly with a whisk. Pour over salad. Toss. Refrigerate. Keeps several days.
