Sunomono (Japanese cucumber salad)

Ingredients

  • Dressing:
  • 1 English cucumber
  • shrimp, crab or other shellfish as desired
  • 2 tbsp. rice vinegar
  • 2 tbsp. sugar
  • dash of MSG
  • drop of soy

Preparation

Step 1

Slice cucumber paper thin.
Sprinkle with salt and let sit for 10 to 15 minutes.
Squeeze out excess moisture.
Mix together dressing ingredients.
Toss dressing with cucumber and shellfish.
