Chicken Picatta

Ingredients

  • 2 chicken breast boneless and skinless
  • 2 T flour
  • 1 t OIL
  • 1 t BUTTER
  • 1 sm. clove garlic minced
  • 1/2 c. white wine
  • 2 T lemon juice
  • 2 T chopped parsley

Preparation

Step 1

Pound the chicken breasts until they are 1/4 in thick and then coat with the flour. In medium skillet over medium heat, heat the oil and butter. Saute the chicken until golden brown on both sides. Add garlic, white wine, and lemon juice. Cover and let simmer until fork tender, about 10 minutes. Remove the chicken to a plate and keep warm. Over medium high heat boil sauce in skillet rapidly until slightly thickened. Heat throughly. Spoon sauce over chicken and garnish with lemon.
