Ingredients
- 1/2 lb ground beef
- 1 small onion, diced
- 1 teaspoon chili powder
- 1/2 cup mild taco sauce
- 1/8 teaspoon salt
- 1/8 teaspoon ground cumin
- canola oil
- 4-6 inch flour tortillas
- 4 oz Mont. Jack cheese, shredded (ab 1 cup)
- 1 small red pepper, thinly sliced
- 1 small green pepper, thinly sliced

Preparation
Step 1
1. In 2 quart saucepan over high heat, cook beef and onion until all juices evaporate, meat browned. Stir in chili powder, cook 1 minute. Add taco sauce, salt and cumin, heat to boiling. Reduce to low, cover and simmer 5 minutes, stiring occasionally.
2. Meanwhile in 10 inch skillet over med -high heat in 1/4 inch hot oil, fry 1 tortilla at time, 2 minutes each side, until browned. Remove to papertowels.
3. Preheat oven to 350. Place cooked tortillas on cookie sheet. Stir half of cheese in beef. Top tortillas with beef mixture, green and red peppers, remaining cheese. Bake 5 minutes or until cheese in melted.
