Sun Dried Tomato Butter

Ingredients

  • 1 lb Butter
  • 1 Cup Chopped and re-hydrated Sun-dried tomatoes
  • 3 Tbsp Honey
  • 3 Tbsp Capers
  • 1/2 Cup Fresh Chopped Parsley
  • Salt
  • Pepper

Creamy, sweet and savory, I must confess I have eaten a coin straight up and was in heaven.  It’s great to make a big batch, keep a roll in the freezer and be able to have it handy for the whole grilling season – it does last for more than six months if wrapped well.
