Mocha Dream Cake

A finalist in the 2001 Nestlé Toll House "Share the Very Best" recipe contest, this dessert was submitted by Jennifer Lee Kalos of Chelmsford, Massachusetts. Created in honor of her father's birthday, this delicious chocolate- and coffee-flavored cake and sweet, creamy mocha frosting is perfect for every family's celebrations.

Ingredients

  • Cake:
  • 1 1/2 cups hot water
  • 1 tablespoon Instant Coffee Granules
  • 1 cup COFFEE-MATE Powdered Coffee Creamer
  • 2 1/3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 1/3 cups (8 oz.) White Morsels
  • 1/3 cup vegetable oil
  • 1 2/3 cups granulated sugar
  • 4 large eggs
  • 2/3 cup (5 fl.-oz. can) Evaporated Milk
  • 2 tablespoons white vinegar
  • 1 teaspoon vanilla extract
  • 2/3 cup Baking Cocoa

  • Frosting:
  • 2/3 cup White Morsels
  • 1/3 cup butter or margarine
  • 1 tablespoon Instant Coffee Granules
  • 1 1/2 teaspoons water
  • 2 pkgs. (3 oz. each) cream cheese
  • 4-4 1/2 cups powdered sugar

Preparation

Step 1

FOR CAKE:
1. COMBINE water and Taster's Choice in medium bowl. Stir in Coffee-mate with wire whisk. Combine 1 2/3 cups flour and baking soda in another medium bowl.

2. Microwave 1 1/3 cups morsels and vegetable oil in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted.

3. Add coffee mixture, sugar, eggs, evaporated milk, vinegar and vanilla extract to melted morsels; mix with wire whisk.
Gradually beat in flour mixture until combined. (Batter will be thin.) Pour 3 1/4 cups batter into medium bowl; stir in remaining flour. Pour into prepared pans.

4. BLEND cocoa into remaining batter with wire whisk until blended.
Slowly pour even amounts of cocoa batter into the center of each pan. (Cocoa batter will spread evenly outward from center.)

5. BAKE for 40 to 45 minutes or until wooden pick inserted in center comes out clean.
Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Frost cake with frosting between layers and on top and side of cake.




FOR FROSTING:
1. MICROWAVE 2/3 cup morsels and butter in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR.
Morsels may retain some of their shape.

2. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted. Combine Taster's Choice and water in small bowl.

3. Beat cream cheese and coffee mixture into melted morsels. Gradually beat in powdered sugar until mixture reaches spreading consistency. Makes about 2 1/2 cups.

Loved this cake!

I made this cake for my daughter's birthday. It baked up perfect and looked just like the picture. Everyone in the family--that likes coffee, loved it! The blend of flavors--coffee--chocolate is wonderful. I could not keep out of this cake--I had to share it with friends(and they loved it too) before I ate the whole thing!

I really love the flavor of this cake, because it is the perfect blend of coffee and rich chocolate. The cake is very moist and the frosting is the perfect topping. This is great for parties.

A better, cheaper suggestion...After making two of these cakes for a friend, I found a simpler idea. Buy a box of chocolate cake mix and add a tablespoon of instant coffee, then just use this frosting mix. That's my next plan, the cake is chocolate like in this recipe, only mocha part is really the frosting. The ingredients cost too much to make regularly unless you're a yuppie.

Best Coffee/chocolate cake ever! I am a Nescafe coffee lover, have been for years, so when I found this recipe I could not wait to try it and to add a cream cheese frosting to it. What can I say, but that it is sinfully good.What a special treat, but save it for yourself, to good to serve it to others unless you want to make brownie points.

Nothing against anyone that submitted a review of this cake, but I would say that this cake was ok but I think that it is meant more for coffee lover's more than the average-joe like myself. I would however say that the icing would be nice on a moist chocolate cake but the cake itself, I give it a 5 out of 10. Icing was much better I would say a 7.

I made this cake for Thanksgiving and what a hit it was at my mother in laws with all of her coffee drinking friends!!! It was easy to make and baked up very nicely.

This cake was wonderful. I didn't want it to be too sweet, so I cut the powdered sugar to about 3 cups and added about a cup of whipped topping. It came out wonderful. My mother has asked me to make again and again.

This took a while to make, but it was worth the effort. Delicious!!! This cake was time consuming, but worth the work! The cake itself is not as sweet as imagined, but that worked because the frosting is a bit on the sweet side on its own. Combine the two together and this cake is very well balanced. The frosting has the perfect coffee taste and is not overpowering for those who are not too particular on coffee. Overall a good dessert.
