Fresh Mozzarella, Tomato, and Basil Couscous Salad

Ingredients

  • 2 cups chopped tomato
  • 3/4 cup fresh mozzarella, diced
  • 3 tablespoons minced shallot
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 clove garlic, minced
  • 1 1/4 cups water
  • 1 cup couscous
  • 1/4 cup chopped basil

Preparation

Step 1

1. Combine tomato-garlic. Chill 30 minutes.

2. Bring water to a boil, add couscous. Take off heat, cover and let stand 5 minutes. Fluff with a fork and cool. Add couscous and tomatoes, toss gently.

Notes: Delicious! The perfect summer dish with very simple fresh flavors. Definite repeat. Served with Pesto Shrimp Skewers for a very easy and delicious and healthy summer meal. Yum!
