Chicken with peppers and onions in red sauce

Ingredients

  • 2 lbs chicken pieces
  • salt and pepper
  • oregano
  • 2 tablespoons olive oil
  • 2 green bell peppers, cut into narrow strips
  • 1 large onion, thinly sliced
  • 8 ounces mushrooms, trimmed and quartered
  • 2 garlic cloves, finely chopped
  • 2 cans chopped italian peeled tomatoes, drained (or one 28 oz can)

Preparation

Step 1

1. Preheat oven to 450. Oil baking dish.

2. Rinse chix, pat dry. Arrange skin side down in pan. Sprinkle with s&p. Bake for 30 minutes.

3. Turn chicken pieces, sprinkle skin side with s&p. Bake 20 minutes more or until lightly browned.

4. While chix cooks, in skillet heat oil at med heat. Add peppers, onions and mushrooms. Cook,stirring frequently, until tender, lightly browned (ab 15 mins).

5. Stir in garlic, cook 2 minutes. Add tomatoes, oregano, salt and pepper. Simmer and cook til thick, about 30 minutes. Spoon some of fat from around chicken. Pour sauce and veggies over and around. Bake 20 minutes.
