Ingredients

  • 1 can (15 1/2oz) black-eyed peas, rinsed and drained
  • 3/4 cup chopped sweet red pepper
  • 3/4 cup chopped green pepper
  • 3 green onions, chopped
  • 1 medium onion, chopped
  • 1/4 cup minced fresh parsley
  • 1 jar (2oz) diced pimientos, drained
  • 1 garlic clove, minced
  • 1 bottle (8oz) fat free italian salad dressing
  • baked tortilla chips

Preparation

Step 1

In a bowl combine the first nine ingredients, cover and refrigerate for 24 hours. Serve with tortilla chips.
