YAM CRUNCH

Ingredients
- 2 yams (peeled and cut into 2" chunks)
- 1/4 cups + 3 tbs. unsalted butter
- 2 eggs
- 1 tsp. pure vanilla extract
- 1/2 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup toasted chopped pecans

Preparation
Step 1
In pot combine yams with enough water to cover by 1". Over high heat bring to a boil. Reduce heat to medium; cook until tender, about 20-25 minutes. Mash until smooth; cool 15 minutes.
Set aside 1 cup yams.
Preheat oven to 350.
Butter a 1-qt. casserole dish.
Melt 1/4 cup butter.
In large bowl lightly beat eggs; beat in vanilla, melted butter and reserved mashed yams. Transfer to casserole dish.
Combine sugar, pecans, flour; with fingers work in remaining butter until there is pea-sized crumbs. Pour mixture over yams.
Bake until top is bubbly, about 30 minutes.
