- 1/3 cup apple juice
- 1/3 cup milk
- 2 1/2 t salt
- 2 t sugar
- 1.7 lb. boneless, skinless turkey breast (1 med. or 2 small)

Step 1
1. Combine apple juice, milk, salt, and sugar and stir until dissolved to make a brine.
2.Inject the brine into each part of the breast. Capture any that escapes.
3. Place breast and all captured or leftover brine in zip-top bag. remove all the air from the bag by using the water-displacement method and seal it. Refrigerate the sealed bag for 12 hours.
4. Preheat a water bath to 144 degrees farenheit.
5. Remove turkey from the bag and rinse it with cool water and pat it dry.
6. Place the breast in a clean zip-top bag, remove as much air as possible from the bag and seal it.
7. Cook sous vide to a core temperature of 142 degrees, about 1 3/4 hours, and then hold it at that temperature for 35 minutes more.
8. Serve the turkey warm or cold.
