Ingredients

  • Dressing:
  • 1 can red beans, drained & rinsed
  • 1 20oz. bag frozen mixed vegetables, cooked, drained and cooled
  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • half a green pepper, chopped
  • Mix together 1 c. sugar and 2 TBSP flour
  • Add: 1 TBSP regular, yellow mustard
  • 1/2 c. cider vinegar
  • 1/3 c. water

Step 1

Mix well and cook over low heat until thickened. Cool slightly then pour over vegetables. Best if made a day ahead using to let flavors mellow. Refrigerate and stir several times to get dressing into all the vegetables.
