Rum Cake with Nut Glaze

Ingredients

  • For glaze:
  • 1/2 Cup Rum
  • 1 Cup chopped pecans
  • 1 18.5 oz Instant cake mix
  • 1 3.5 oz instant pudding mix
  • 4 Large Eggs
  • 1/2 Cup vegetable oil
  • 1/2 Cup cold water
  • 1/2 cup rum
  • 1/2 stick butter
  • 1 cup sugar
  • 1/4 cup water

Preparation

Step 1

For cake:

1. Preheat oven to 325. Grease and flour a 12 cup bundt pan.

2. Sprinkle nuts over bottom of pan

3. In a large bowl combine cake mix, pudding mix, eggs, rum, oil and water

4. Using electric mixer, mix at low speed until moistened.

5. Beat at high for 2 min

6. pour batter over nuts and bake 1 hr or until done

For glaze:

Melt butter in saucepan. Stir in sugar, water, and rum. Boil 5 min, stirring constantly. Prick cake and spoon and brush over top.
