Mexican Mocha Pudding

Ingredients

  • 1/2 Cup brown sugar
  • 3 Tablespoon unsweetened cocoa powder
  • 2.5 Tablespoon arrowroot powder
  • 1 Tablespoon instant espresso powder
  • 1/2 Teaspoon ground cinnamon
  • 1/2 Teaspoon chili powder
  • 1/4 Teaspoon Salt
  • 1 Large Egg
  • 2 Large egg yolks
  • 2 cups milk
  • 4 oz semisweet chocolate
  • 1 Teaspoon vanilla extract

Preparation

Step 1

1. Combine sugar, cocoa powder, espresso powder, cinnamon, chili powder, and salt in a bowl.

2. Whisk together egg and egg yolks in separate bowl.

3. Stir egg mixture into cocoa mixture.

4. Scald milk in saucepan over medium heat until milk is steaming. Temper milk mixture into cocoa mixture.

5. Return to medium heat and continue whisking until pudding starts ot bubble.

6. Remove from heat and stir in chocolate and vanilla until smooth, Cool to room temp and refrigerate.

Serve with pumpkin cream
