Quick Microwave Tater Soup

Ingredients

  • 4 slices bacon
  • 1 medium onion, chopped
  • 1/2 cup water
  • 1 package (12 ounces) frozen shredded hash brown potatoes
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 3 Tablespoons butter or margarine
  • 2 Tablespoons flour
  • 2 cups milk
  • 1 cup water

Preparation

Step 1

Place bacon in 2 1/2 quart casserole. Cover with paper towel and microwave until crisp, 4-5 minutes. Remove bacon from fat; drain bacon on paper towels.

Add onion to bacon fat. Cover and microwave until onion is tender, 3-4 minutes.

Add 1/2 cup water and the frozen potatoes. Cover and microwave until potatoes are thawed, 6-7 minutes.

Stir in salt, pepper and butter or margarine. Shake flour and milk in tightly-covered jar; stir into potato mixture with remaining cup of water. Cover and microwave 5 minutes; stir. Cover and microwave until mixture boils and thickens slightly, 3-5 minutes.

Crumble bacon and sprinkle over top. Makes 5-6 servings.
