Ingredients
- 1 pie crust
- 2 cups old fashioned oats
- 2 cups chopped pecan halves
- 2/3 cup brown sugar
- 1 tbs kosher salt
- 1/2 tsp ground vanilla
- 1/2 tsp cinnamon
- 2/3 cup light corn syrup
Preparation
Step 1
Unroll pie crust on a baking sheet and bake according to package directions. When cool enough to handle, break into late pieces.
Preheat oven to 375° with racks in upper and lower thirds. Toast oats and pecans on two separate baking sheets in the oven until golden and fragrant, about 6 minutes for the pecans and 12 minutes for throats. Line a baking sheet with parchment paper or coat with nonstick spray. combine brown sugar, salt, vanilla, cinnamon, pie crust pieces, oats and pecans in a large bowl. Stir in corn syrup to coat mixture. Spread granola on prepared baking sheet; bake 15 minutes, stirring about halfway through baking. Store granola in an airtight container.
