Ingredients

  • 4 small onions chopped
  • 4 large red peppers
  • 1 stick butter
  • 1/2 potato peeled and grated
  • 3 cups chicken broth
  • 1/2 cup cream
  • 2 tablespoons lemon juice
  • fresh dill garnish if desired

Preparation

Step 1

Combine onion and pepper with butter and saute about 30 minutes. Add potato and broth and cook another 15 minutes. Puree in blender in small batches. (vent blender so does not get hot and explode I speak from experience) Add lemon juice and salt and pepper to taste. garnish with fresh dill if desired.
