Ingredients
- 4 tablespoons butter
- 2 tablespoon chopped onion
- 4 cukes peeled seeded and sliced
- 4 tablespoons flour
- 2 cups chicken broth
- 1 cup milk scalded
- 1 cup light cream or half and half
- 1 1/2 teaspoons salt
- 1/4 teaspoon white pepper
Preparation
Step 1
Melt butter and saute onion and cukes for about 10 minutes. Add flour and stir. Puree all in blender then return to sauce pan. Stir in chicken broth and milk and cook over low heat aprox 10 minutes. add cream salt and pepper.
Chill and serve cool.
