Ingredients
- 1 tablespoon olive oil
- 1 onion, minced
- 1 1/2 cups rice
- 2 tablespoons minced jalapeno
- 1 teaspoon minced garlic
- 1 cup spinach
- 1/4 cup light coconut milk
- 1 teaspoon cumin
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 2 tablespoons coconut flakes
- 2 tablespoons cilantro
- 1 1/2 tablespoons lime juice
- 1 teaspoon lime zest
Preparation
Step 1
1. Saute onion in oil 5 mins.
2. Add rice-garlic. Add spinach-s&p and 3 cups water. Bring to boil.
3. Cover and simmer 20 mins. Add coconut-zest.
Notes: Not all that coconutty ... but very good!
