Bisquick PB&J Strips

Peanut butter cookies filled with strawberry jam! They look like they came from a cookie bakery, but these are super easy to make. Makes:About 4 dozen cookies
Ingredients
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup peanut butter
- 1/4 cup shortening
- 1 egg
- 1 1/2 cups Original Bisquick mix
- 1/3 cup strawberry jam or preserves
Preparation
Step 1
1. Heat oven to 375°F. In large bowl, beat sugars, peanut butter, shortening and egg with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 1 minute, scraping bowl occasionally. Stir in Bisquick mix until blended.
2. Place dough on surface sprinkled with Bisquick mix; gently roll in Bisquick mix to coat. Divide dough into 4 parts. Shape each part into a roll 3/4 inch in diameter and about 13 inches long. On large ungreased cookie sheet, place rolls about 2 inches apart.
3. Make indentation lengthwise in center of each roll with handle of wooden spoon. Spoon jam into resealable food-storage plastic bag; cut very small (1/4-inch) tip from corner of bag. Squeeze jam evenly into indentations.
4. Bake 9 to 11 minutes until light golden brown and set. Cool on cookie sheet 5 minutes. Cut each roll into 12 slices. Remove from cookie sheet to cooling rack.

Lots of compliments on this one. Very unique flavor for a cookie. I used grape jelly, but you can add any flavor you'd prefer. After i took the raw dough out of the bowl to roll, i thought it was too dry and was fearful the cookie would just crumble in the oven. But, the cookie strips came out perfect. Easy to recommend this recipe. Easy to make.
I had my doubts about this recipe but I chose it because it looked like it would be easy and fun for the children. Wow! What a perfect cookie. Everyone loved it, especially my husband. We even tried a few variations like spreading marshmallow fluff and adding a few chocolate chips. I will keep this recipe on hand always.
I had baked 5 different kinds of cookies for family graduation parties and needed one more that wouldn't take much time to make. Saw this recipe on-line and decided to try it and it did make a hit with ALL ages.Put homemade elderberry and strawberry/rhubarb jams on them and were they ever yummy. Then I made another batch for my granddaughter's 3rd birthday party and the little ones ate them up fast. Will add this to my recipe file and sure it will be used often. Not only easy to make, but inexpensive compared to so many of the recipes.
I think it is an easy and tasty treat for kids. It would also be a good recipe for the kids to help with. Not too many ingredients or steps and it is something most kids like.
I made this with the peanut butter and it was a hit right out of the gate. made it with hazelnut butter so the grand children could take it to school for a bake sale and the kids loved it, the school has a no peanut policy as some of the children have a high risk to them so this solved the problem, great recipe will make it often with or without the peanut butter.

This sounds like a fun and delicious recipe either as the original P&B or with the second version with chocolate. I think the P&B would go well with a cup of tea or glass of cold milk and the chocolate version would do as well with the same and great with a cup of hot chocolate! The recipe is quick and easy to do and sure to be a favorite.
Very quick and simple to make. Also very tasty. Will make again.
I used fig preserves and it was great.Use whatever you like.Cherry,grape. Your imagination is the limit.
Excellent and easy! I am a diabetic, so I substituted Splenda sugars and sugar free jams, this cut the carbs even more and is still delicious.
