Ingredients
- 1 cup heavy cream
- 1 cup milk
- 1/4 vanilla bean (split)
- 3 egg yolks
- 1 whole egg
- 1/4 cup sugar
- 1/4 cup brown sugar
- sliced fruit or berries

Step 1
Preheat oven to 325. Combine heavy cream, milk and vanilla bean. Bring to a boil, and then remove from heat and steep for 10 minutes. Scrape bean seeds into the milk mixture. Using an electric mixer, combine eggs and sugar. Add the milk mixture in a steady stream. Strain mixture through a fine strainer. Skim foam, and divide into four ramekins (5oz each). Place ramekins in a baking dish. Fill baking dish with enough water to reach halfway up sides of ramekins. Bake for approximately 25 - 30 minute until just set. Cover tops with brown sugar and caramelize with a kitchen torch. Garnish with fruit or berries.
