Ingredients
- 1 med green bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 4-5 hot cherry peppers, thinly sliced
- 2 cloves garlic, finely chopped
- 1 1/2 lb boneless, skinless chicken breasts or thighs if you prefer
- 2 tsp dried italian seasoning, divided
- 1/2 tsp kosher salt, divided
- 1/8 tsp pepper
- 1 tbl extra virgin olive oil
- 1 cup fresh sliced mushrooms
- 1 28 oz can diced tomatoes undrained
- 1 cup (approximately) rose or white wine
- 2 tsp sugar - I don't use this

Preparation
Step 1
preheat lg saute pan on med-high 2-3 min season both sides of chicken with 1 tsp ital seasoning, 1/4 tsp salt and pepper.
place oil in pan, then add chicken; cook 1-2 min on each side or until golden, stir in both peppers, onions, garlic and mushrooms. cook 2-3 min or until onions begin to soften.
stir in remaining ingredients, including ital seasoning and salt. reduce heat to med-low and cover. cook and stir 12-15 min, turning chicken occasionally , or until chicken is 165 degrees, slice chicken and serve with sauce.
