    med green bell pepper, thinly sliced

    small onion, thinly sliced

    hot cherry peppers, thinly sliced

    cloves garlic, finely chopped

    lb boneless, skinless chicken breasts or thighs if you prefer

    tsp dried italian seasoning, divided

  • 1/2

    tsp kosher salt, divided

  • 1/8

    tsp pepper

    tbl extra virgin olive oil

    cup fresh sliced mushrooms

  • 1

    28 oz can diced tomatoes undrained

    cup (approximately) rose or white wine

Directions

preheat lg saute pan on med-high 2-3 min season both sides of chicken with 1 tsp ital seasoning, 1/4 tsp salt and pepper. place oil in pan, then add chicken; cook 1-2 min on each side or until golden, stir in both peppers, onions, garlic and mushrooms. cook 2-3 min or until onions begin to soften. stir in remaining ingredients, including ital seasoning and salt. reduce heat to med-low and cover. cook and stir 12-15 min, turning chicken occasionally , or until chicken is 165 degrees, slice chicken and serve with sauce.
