Chestnut Apple Cherry Stuffing

Traditional bread stuffing takes a twist with added chestnuts, apples and dried cherries, giving it a touch of sweetness and a nice crunch from the chestnuts.

Ingredients

  • 10 tablespoons unsalted butter, plus additional for baking dish
  • 4 stalks celery, chopped
  • 2 leeks, halved and thinly sliced
  • 2 Gala apples, cut into 1/2 inch cubes
  • 1 (12-ounce) jar chestnuts, peeled, cooked, chopped, approximately 1 1/2 cups
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh sage
  • Kosher salt and freshly ground pepper
  • 3 cups low sodium chicken broth
  • 2 large eggs
  • 1/4 cup fresh chopped parsley
  • 16 cups stale brioche cubes, cut into about 1/2" pieces, approximately 1 1/2 pounds
  • 1 cup dried cherries

Step 1

Preheat oven to 375°F; butter 3 quart oven proof baking dish.

Melt 8 tablespoons butter in large pot over medium heat. Add celery, leeks, apples, chestnuts, thyme, sage, 1 teaspoon salt and few grinds of pepper. Cook stirring occasionally until veggies are tender, approx. 5 minutes. Add the chicken broth and bring to a simmer. Remove from heat and set aside.

Whisk the eggs, 3 tablespoons parsley in a large bowl. Add the bread cubes, dried cherries.

Combine liquids with bread mixture (steps 2 & 3) together. Transfer to baking dish. Dot with remaining 2 tablespoons of butter.

Cover with foil and bake 30 minutes. Then uncover and bake until browned an additional 20 minutes. Sprinkle with remaining 1 tablespoon of parsley.
