Hash Brown Brunch Casserole

Ingredients

  • 3 tbsp vegetable oil
  • 1 bag frozen hash browns (4 cups)
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 cup ham, cubed
  • 10 eggs, beaten
  • 2 cup cheddar, shredded
  • salt and pepper to taste
  • Italian seasoning to taste

Preparation

Step 1

Heat oil in skillet. Add hash browns, onion and green peppers. Cook until potatoes begin to brown. Spray a 9x13 pan with oil, spread potato mixture in bottom of pan. Top with ham. Pour eggs over all and season with salt pepper and italian seasoning. Gently stir to coat all ingredients with egg. Sprinkle with cheddar cheese. Cover with foil and refrigerate overnight. Bake covered for 25 minutes at 375. Remove foil and bake 5 more minutes.
